Veracruz-style Plantain Balls

Origin: Tuxtla, Veracruz

Better known as Mogo Mogo Veracruzano, it is a typical dish from the south of Veracruz, it is a mixture of aromas and flavors that has to do with the richness of its flora and fauna, but it is also the result of its indigenous and Afro-mestizo past.

From pre-Hispanic times to the present, food has been part of rituals that have to do with hunting, fishing and harvesting.

Veracruz-style Plantain Balls are a clear example of the fusion with the Old World and with Africa, from where the slaves brought fruits and tubers, such as plantains, yuca and coconut, which they included in the diet of the people of Veracruz.

Chiles en Nogada

Origin: Convent of Santa Monica, Puebla

There are several versions about the origin of this dish and one of the most popular says that it was invented by the Augustinian nuns of the Santa Monica convent in Puebla, to celebrate both the recent Independence of Mexico, and the saint's day of the new emperor, Agustín de Iturbide.

Taking advantage of seasonal products such as pomegranates and walnuts, the Augustinian nuns prepared a dish that carried the colors of the Trigarante Army: green, white and red, being precisely the month in which walnuts and pomegranates are harvested in the state of Puebla, after much thought they came up with the idea of ​​making this wonderful dish.

Chiles en Nogada are a clear example of a masterpiece of Mexican cuisine that promotes nationalism in our country through the celebration and history that revolves around this dish.

Enchiladas Morelianas

Origin: Morelia, Michoacán

One of the most popular dishes is Enchiladas Morelianas, which were known during the Independent Mexico when the insurgents, as well as their armies, traveled through the Mexican territory during the struggle for independence.

In each State of the Republic, there is usually a version of enchiladas, but this version is special since it distinguishes them by having a different preparation process than the others.

To make these enchiladas, the first difference is that the tortilla is dipped in sauce (guajillo chile) and then fried, whereas in other recipes the tortilla is first fried and then dipped in sauce; making a filling of potatoes, carrots, accompanied by chicken, a lettuce leaf, cheese, onion and cream.

The Purépechas were the ones who made this dish using the fruits, spices and all the resources they had for their food.

Enchiladas Morelianas are a typical dish from Michoacán, a state that has a large catalog of dishes.

Date and Walnut Tart

Origin: Saltillo, Coahuila

This is a delicious tart made with walnuts and dates, which are the fruit of the date palm tree symbolic of arid climates, native to North Africa and the Middle East, who are the main producers. The date was first cultivated in Iraq and had great importance in ancient peoples. For Chaldeans and Arabs it was the tree of life; in Egypt it meant fertility and for the Greeks it meant triumph.

Spanish missionaries introduced the date palm to America, since they used it to surround the construction of the missions.

Spanish explorers introduced the date to Mexico, around Sonora, Coahuila, Sinaloa and Baja California, giving rise to one of the most representative desserts of Saltillo.
